This is a wonderful recipe for an autumn Sunday lunch – rich duck teamed with piquant red cabbage and a sweet, sticky glaze.

200ml vegetable oil or melted duck fat
6 cloves garlic, sliced
4 juniper berries, crushed
4 sprigs fresh thyme
25g salt
